  1. Fry the onion and garlic in the olive oil in a large saucepan, for about 5 minutes, or until softened. Add the minced beef, increase the heat, and fry the beef for about 10 minutes.
  2. Once the beef has been broken up and is beginning to brown, add all the other ingredients. Cook for 20 minutes on a medium heat, stirring occasionally. Season to taste and serve!

Serving suggestion

Can be served with anything such as mashed potato, pasta, rice, or hunks of white crusty bread!

  • Put the chopped vegetables into a 9 x 13-inch/23 x 33cm nonstick roasting pan with at least 2½-inch/6cm sides and add the olive oil, miso paste, harissa, tomato paste, soy sauce, and cumin seeds and mix very well. Bake for 40 minutes, stirring halfway through, until browned in places and around the edges.
  • Decrease the oven temperature to 375°F/180°C fan.
  • Add the lentils, barley, stock, coconut cream, wine, water, ¼ tsp salt, and a very generous grind of pepper to the roasting pan. Stir very well, scraping the crispy sides and bottom with a spatula. Cover tightly with aluminum foil and bake for another 40 minutes. Remove the foil and bake for a final 5 minutes. Set aside to rest for 15 minutes, for the sauce to be absorbed a little before serving.

- 1 tsp dried basil
- ¼ tsp red pepper flakes

- 1 TBSP soy sauce
- 1 tsp Worcestershire sauce
- 1 (14.5 oz) can diced tomatoes
- 1 (6 oz.) can tomato paste
- 3 C water
- 1 C brown lentils, rinsed
- ¾ tsp salt
- Fresh spinach, cut into ½&rdquo wide ribbons
- Fresh Parmesan cheese
- Cooked pasta of your choice, orecchiette is my favorite

Heat olive oil over medium-high heat in a large stock pot. Add the onion and sauté for 3 minutes, stirring constantly.

Add the carrots and sauté for an additional 3 minutes, until the carrots begin to soften. Add the garlic and sauté for 30 seconds, stirring constantly. Add basil through lentils and stir to combine.

Bring to a boil over medium-high heat, stirring occasionally. Turn heat to medium-low, cover and boil for 25-30 minutes, until the lentils are cooked through and the sauce has thickened.

Add salt, increasing amount to taste, if necessary. Place cooked pasta into a serving bowl, topped by sliced spinach, lentil ragu, and fresh parmesan cheese.

The first time I made this beef and brown lentil ragu for George I had to go back to get him seconds and thirds before he said he was all done. I served it mixed through risoni pasta and he loved it. It’s really simple, really tasty and high in iron, protein, carbohydrates and fibre and contains hidden veggies for fussy eaters. Despite the inclusion of zucchini, there is no sign of anything green!

Nutrition Note: Lentils are a great addition to meat based sauces. They add quality carbohydrates and fibre and are an economical and nutritious way to bulk up meals, especially if you have a family full of hungry little eaters.

  • 2 tsp olive oil
  • 1 small brown onion, finely grated
  • 1 small carrot, finely grated
  • 1 small zucchini, finely grated
  • 250g beef mince
  • 1 x 400g tin of crushed or chopped tomatoes
  • 1/2 cup water, beef or chicken stock
  • 3/4 cup tinned brown lentils, rinsed and drained
  • tiny pinch of sugar

Method

Step 1

Heat the olive oil in a frypan over medium-high heat. Add the onion, carrot and zucchini and cook for 2-3 minutes or until soft. Add the beef mince and cook for 3-5 minutes until browned. Add the tomatoes and water or stock and bring to the boil. Reduce the heat and simmer for 10-15 minutes. Add the lentils and a tiny pinch of sugar and simmer for a further 5 minutes adding more water if needed. -


HOW TO MAKE INSTANT POT BOLOGNESE

This recipe utilizes two functions of the Instant Pot: the sauté mode and obviously, the pressure cooking mode.

I absolutely love the sauté mode feature.

Unlike a slow cooker where you&rsquod have to get out an entire other pot and do some work on the stove top to sauté or brown something before slow cooking, the Instant Pot lets you do everything in one.

STEP 1:

Sauté the carrots in olive oil until they&rsquore lightly browned. Then, add the celery and onions and cook until slightly softened. Next, add the oregano, basil, parsley, garlic, salt and anchovy paste (don&rsquot skip this ingredient!). Stir until well combined and cook for about a minute until fragrant.

STEP 2:

Add the ground beef. Use a mixture with a decent amount of fat for flavor like 80/20 or 85/15 at minimum. Cook the beef until browned and crumbly, breaking it up with a spatula in the pot. Add the crushed tomatoes, tomato paste, red wine and bay leaves. Stir everything together and place the lid on the pot.

STEP 3:

Set the valve to &ldquosealing&rdquo and manually cook on high pressure for 30 minutes. Let the pressure naturally release for 10 minutes after it&rsquos done cooking then flip the valve to &ldquoventing&rdquo and release the rest of the pressure manually.

At this point you&rsquoll have a nice hearty, thick Italian bolognese sauce ready to be served!

Slow Cooker Lentil Ragu

Since buying our slow cooker before Christmas I’ve tried some of our old favourite recipes in it to see how they fare. Some work very well, some not so much. This is one of the recipes that is improved with a slow low cook. It transforms the sauce into a thick, rich almost meat-like sauce that even satisfied meat-loving Hubs. Technically it is a vegan dish (assuming you use vegan wine and Worcestershire sauce), that is until you load it with cheese like we do.

I often make a big batches of this lentil ragu and freeze in 1-2 portions so a quick dinner is always at hand. We usually serve it with either pasta or couscous but it also works well with rice. What makes this meal even better is that it is a thrifty dish coming in at about 77p per portion.

When ever I use lentils in dishes I tend to use a mixture of both red and green lentils. Red lentils are good for thickening a sauce whereas green lentils give the texture.

This recipe is as easy as it comes. No sautéing of vegetables required. Just throw all the prepped ingredients in the slow cooker, sit back and 5 hours later you have dinner.


Long Player Kitchen

Every home cook should be able to make a good Bolognese. Vegans are no exception and this is one I make all the time. Make a big batch as it freezes well, so if you are stuck in the week for something to cook, this will always be there.

A traditional Bolognese Ragu will be rich and meaty. Beef is actually extremely lean, so in order to get some fat, pork fat is used. Making what could actually be a really healthy meal, one of the worst, especially when loaded with parmesan and eaten with garlic bread and white pasta like we do!

My recipe replaces the meat with red lentils. A great taste by itself, it definitely needs help when being used as a slow cooked ragu. So I spice it up with some smoked paprika, as well as the traditional oregano. The real trick though is using a concentrated beef style stock to add some saltiness and richness. Normally, I would say use a homemade vegetable stock but the beef style is more suited here, just make sure it is beef style and not beef!
