  1. In a large bowl, mix together the minced venison and pork sausagemeat. Season with mustard powder, mustard seeds, liquid smoke, garlic granules, onion salt and meat tenderiser. Mix in just enough water to make the mixture sticky. Cover and refrigerate for three days, mixing once a day.
  2. On the fourth day, preheat the oven to 70 C / Gas 1/4. Form the mixture into 5cm rolls and place them on a baking tray.
  3. Bake for 6 hours in the preheated oven, until firm and cooked through. Wrap in cling film and refrigerate until needed.

Ingredients

Liquid smoke flavouring and meat tenderiser can be purchased in speciality shops or online.

I had to find a recipe to use up some elk meat from last hunting season, and came across this summer sausage recipe. The only thing I did different is bake the sausage at about 250 degrees for about 3 hours. It came out pretty tasty, and was a good way to use up some of that meat!-09 Jul 2006


10 Venison Sausage Recipes and Serving Suggestions

Venison is a wild game meat that is both very lean and very tasty. Although venison sausages are likely to be a bit more expensive than their beef or pork counterparts, the difference in quality really does mean that they are worth purchasing, at least as an occasional treat. If you do not have access to such food items in your local area, simply search online for the availability of vacuum-packed venison sausages, which are frequently sold via mail order.

Venison is a generic term applied to the meat of any member of the wider deer family. This means that the specific type of venison sausages available will vary around the world by geographic location. The venison sausages used in the recipes below are made from Scottish red deer meat.


Recipe

  • 3 lbs trimmed venison, cut into 1 inch cubes
  • 2 lbs 25% fat pork shoulder or trimmings, cubed
  • 2 tablespoons garlic powder or granulated garlic
  • 2 tablespoons kosher salt
  • 2 tablespoons sugar
  • 1 tablespoon fine ground black pepper
  • 2 tablespoons paprika
  • 1 teaspoon dried marjoram
  • 1 teaspoon ground mace
  • 1 teaspoon ground celery seed
  • 1 teaspoon #1 cure (prague powder or Instacure)
    1 cup ice water

  1. Grind the chilled venison and pork through the medium blade on your meat grinder.
  2. Mix all the cure and spices with the 1 cup of ice water.
  3. Pour the water/spice/cure combination into the ground sausage meat and mix it very well by hand to be sure of even distribution.
  4. Stuff the sausage immediately into 35-38mm natural hog casings or comparable sized collagen casings that have been formulated for the smoke house.
  5. Follow correct smoking procedures, and make sure the sausage reaches 152 degrees F.

I have kept this sausage in the freezer for up to 8 months by vacuum packing it, and it hasn't lost any of its goodness. I would try to use it up within 3 months if you don't have access to a vacuum packer though.

Keep in mind that you can certainly multiply the recipe to use up the windfall bounty of a successful hunt, but be sure to keep the ratio of cure to sausage meat the same (1 teaspoon per 5 lbs).


Venison Sausage Recipes

This is great fried and served with gravy and biscuits. Yum.

kosher salt (no substitutions)

The use of pickling salt is important when canning because vegetables need the brine for storage.

You can use this exact “recipe” for canning, because it is hard to find pickling salt in the grocery store. You may use it for everyday cooking also.

You will need a blender or food processor. Place how much salt you need and process it on high until it is super-fine. Store it in the pantry with a tight fitting lid.

If the kosher salt is in chunks, just place some in a resealable bag and break up the chunks with a hammer - then put it in the blender to process.

DO NOT USE TABLE SALT. There are no substitutions for kosher salt and table salt will ruin it.

PICKLING SPICE RECIPE

2 TBS black peppercorns
2 TBS mustard seed
2 TBS coriander seeds
2 TBS hot red pepper flakes
2 TBS allspice berries
1 TBS ground mace
2 small cinnamon sticks, cut into pieces
24 bay leaves
2 TBS whole cloves
1 TBS ground ginger

In a small pan, combine the peppercorns, mustard seed, coriander seed and heat on medium until they are fragrant. DO NOT BURN THEM.

Crack peppercorns and seed with a pestle and mortar OR with the side of a large chef’s knife on a cutting board.

Combine with the other spice and mix well. Store with a tight fitting lid in a dark and dry spot. Makes approximately 1 cup.

VENISON SAUSAGE RECIPE

4-1/2 lb ground venison
1 lb pork sausage
2 TBS salt
2 TBS sugar
2 TBS hickory smoked salt
2-1/2 tsp garlic powder
2-1/2 tsp mustard seeds
2-1/2 tsp black pepper

Mix all ingredients well in a large bowl. Cover and refrigerate. Remove in 24 hours and remix well. Return to refrigerator for 3 days. After 3 days, shape into 5 logs. Bake in oven for 8 hours at 140 degrees or 12 hours in your outdoor smoker.

3 lbs ground venison with no fat (deer, elk, antelope) 
1 lb lean ground beef (or ground pork)
2਌ups water  
1 teaspoon onion powder 
1/4 teaspoon garlic powder 
4 teaspoons cracked black pepper 
2 teaspoons mustard seeds 
2 teaspoons Liquid Smoke 
3 tablespoons Tender Quick   

Mix dry ingredients together in a small bowl.  Add to the ground venison and ground beef and mix thoroughly.  Form into 2-1/2 inch wide logs that are approximately 8 inches long and pack tightly.  Wrap in aluminum foil and chill for 24 hours.

Take out of the refrigerator and piece several times through the foil.  Bake on a broiler rack over a broiler pan at 325 degrees for 1-1/2 hours.  Take the foil off and place back on rack to finish dripping.  Rewrap and refrigerator or freeze.

You may also use an empty, clean soup can.  Just spray (or rub) well with oil and pack with the meat mixture.  Bake and the meat will slide right out.

4 lbs ground pork
4 lbs venison, cut into 1-1/2" pieces
2 TBS sea salt
2 tsp coarse black pepper
1/4 tsp nutmeg
1/4 tsp clove
1/2 tsp Allspice
1/2 tsp garlic powder
2 TBS ground sage

Put venison through meat grinder. Mix all spices together first and add to the ground pork and ground venison thoroughly by hand. Package in 1 lb packages and vacuum seal.

RECIPE FOR ITALIAN VENISON and PORK SAUSAGE

4 pounds venison scraps
2 pounds of lean bacon
1 TBS kosher salt
1/2 TBS black pepper
1/2 TBS red pepper flakes
1 TBS rosemary, minced
1/2 cup Italian parsley
1/2 cup dry white wine
8 ounces (8 feet) sausage casings

Run the venison through the largest holes of the grinder and do the same with the bacon. 

In a large bowl, mix the venison and bacon with your hands until well blended.  Add the rest of the ingredients and mix just until blended.  Chill mixture for 30 minutes.

Set up a sausage stuffer and attach the casing to the funnel feeder.  Begin stuffing the sausage into the casing and twist every 4 inches.  Keep the diameter about 1 inch to insure proper cooking.  Prick sausage with a pin all over.  Chill until ready to cook.

homemade garlic powder
1 tsp homemade onion powder
1 tsp freshly ground black pepper
2 tsp Liquid Smoke
2 jalapeno peppers (or to taste), seeded and minced
1-1/2 cups shredded cheddar cheese

Mix the tender quick, water, mustard seed, garlic powder, onion powder, black pepper and Liquid Smoke together in a large bowl until the tender quick is dissolved. Add the ground venison, jalapeno peppers and cheese mix well. Divide in half and roll into logs. Wrap tightly with foil and refrigerate overnight.

PREHEAT oven to 170 degrees and line a baking sheet with foil. Unwrap the sausage logs and place on the prepared baking pan.

Bake for a few hours or until the internal temperature reads 165 degrees. Cool to room temperature and dab excess oil. Slice and serve.

I like a juicy game sausage, and for this reason, I always combine equal amounts of pork with the game meat. This sausage recipe incorporates the trinity of Louisiana flavors along with typical sausage spices to create a magnificent flavored sausage.

INGREDIENTS:

  • 2 pounds ground venison
  • 2 pounds ground pork
  • 1/2 pound pure pork fat
  • 1/4 cup chopped onions
  • 1/4 cup chopped celery
  • 1/4 cup chopped red bell pepper
  • 1/4 cup diced garlic
  • 1/2 cup sliced green onions
  • 1/4 cup chopped parsley
  • salt and black pepper to taste
  • 1 tbsp ground sage
  • 1 tbsp caraway seeds
  • 15 feet pork sausage casing

METHOD:
In a large mixing bowl, combine meat, pork fat, onions, celery, bell pepper, garlic, green onions and parsley. Using your hands, mix all ingredients well until thoroughly incorporated. Season to taste using salt, pepper, sage and caraway seeds. Continue to blend seasonings into the meat mixture. Force meat through a meat grinder into the casing and tie off at six inch intervals. This sausage may be smoked, pan-fried or poached.

4 ounces salt
2 ounces red pepper
2 ounces onion powder
1 ounce garlic powder
2 ounces black pepper
3/4 ounce Accent

Sausage
8 ounces vinegar
16 ounces Italian salad dressing
10 pounds ground venison
10 pounds ground pork Boston butt
3 cartons casings
3 bunches onion tops, finely chopped
1/2 cup minced garlic
parsley, chopped, optional

Combine seasoning mix ingredients. You can store this in an airtight container for later use if you wish.

To make the sausage: mix seasoning mix with meat and remaining ingredients (except casings). Stuff in casings (or form into patties).
