I was in the habit of making apple pie with thin sheets bought from the time I worked even 10 hours, and when I left the office and passed the windows of the blocks, on the way to the subway that took me home, it smelled of cakes and I wanted something sweet. At that time I was not very friendly with chocolate, as a quick solution to quench the craving for sweets. I preferred to grab a cake and, even if it caught me in the middle of the night and my eyes were sleeping and tired, I still ate a few slices before going to bed. And the next day I would take some pieces to the office for my colleagues.

The apple strudel cake I made was much more appreciated than all the pies and strudels I bought at the kiosks and pastries in my office area.

The filling of this pies & # 8220strudel & # 8221 with apples it is exactly as I like it with cinnamon and vanilla. I choose hard, beautiful, slightly sour apples. why is my pie much better than others? I do not put flour in the composition of apples, I prefer to heat them a little, to evaporate the liquid. You will see that it cuts nicely, it does not spread the composition.

1.2 kg mere
120 g of sugar
1 sachet of vanilla powder

1 -2 tablespoons gray
1 packet of pie sheets

For greased sheets:
100 ml oil
(if we do not fast, grease the sheets with 100 g of melted butter)

For wallpaper - optional:
powdered sugar

I peeled the apples and shaved them with a small-mesh grater. I hardened them with sugar, vanilla sugar, lemon juice (prevents oxidation and keeps the beautiful color), 1 cinnamon stick and cinnamon powder, over medium heat until the liquid left by the apples evaporates.

I greased 4-6 sheets of pie with melted butter or oil during Lent. I put the hardened apples over the sheets and spread them evenly. I sprinkled a little semolina over them and covered with another row of four greased sheets, then I rolled.

I put the pie in the lined tray and then greased it with melted butter or oil.

I baked the apple strudel pie in the preheated oven at 180 ° C for 35-45 minutes or until browned.

When it was cooked, I took it out and let it cool. I cut the slices and powdered them with sugar.


How to make real apple strudel. I studied in Austria

I don't consider myself the biggest maker of puff pastry and cakes, but I'm not in the Venice bush either. When I was younger, I tried to take a product and decline it in as many ways as possible. To reinterpret it as the competitors from the cooking shows would say.

I knew, and I think I still know, to make about 4-5 types of apple pie / tart. But the strudel never came out. It's true that I didn't even insist much on this recipe.

Good. In the Austrian mini-holiday, our hosts took us to a cooking class (Edelweiss Cooking School). Two traditional desserts in the Salzburg area & # 8211 Apfelstrudel (apple strudel) and Salzburger Nockerl (see here what is it). Our teacher was a chef who spent the summer in Salzburg, and in the winter he worked at the restaurant of a famous hotel, located in a Swiss mountain resort. You will realize that for him, making an apple strudel is like putting our mothers to boil two hard-boiled eggs.

Being a gang of 4, the boys with the trip (me and Eddie from Tuk Tuk) got into a team, and the girls (Mazilica and Oana Titica from Chicineta). And give it a go. Johann, the chef we were talking about, showed us how to make an strudel, then we had to reproduce it.

Things are very, very simple. That's when someone else does it in front of you. 4 apples are cut into slices, put two tablespoons of raisins, two of sugar, a drop of rum (to taste) and cinnamon, also to taste. I would halve at least the amount of sugar and raisins, because the finished product was very sweet. Mix all in a bowl.

You have to be a little careful with the dough, because certain quantities must be observed. To 100 grams of flour add 125 ml of water (at room temperature) and half a tablespoon of oil. The oil is what gives the dough elasticity. Mix all with a spoon, then knead a little and let it sit for 2 hours.

Finally, we start mounted strudel. You have to have a 1 meter by 1 meter paper tablecloth. This is because the flour is sprinkled on the tablecloth, the dough is put, and it is spread with a rolling pin. Then, take the dough that has reached the size of a pizza and you have to make it thinner and thinner with the help of the two gloves provided. Put the center of the sheet on the outside of the palms and keep moving the dough from one hand to the other until it stretches like the world. That's why I was talking about oil, which gives the sheet elasticity.

Once the sheet is spread, it is greased with melted butter, sprinkle 2-3 tablespoons of breadcrumbs (to absorb the juice left by the apples), put the apples aside and roll. How? Here's the trick. You grab the side of the tablecloth and roll from close to close. As if you had a blanket full of toys and roll it carefully so that the toys do not all gather in the middle of it. Melted butter on top of the strudel and put in the oven for 30 minutes at 220 degrees Celsius. Sounds simple, doesn't it? Harder with practice.

Remove the strudel from the oven, sprinkle with powdered sugar and open a cold beer until it cools. Auch, that wasn't part of the recipe. Our unit wishes you well good appetite!


Strudel recipe with apples and puff pastry & # 8211

  1. Sift the flour together with the salt in a bowl. Cut the butter into small cubes and place it over the flour. Using two knives, grind the butter well, mixing it with the flour. Quickly add and mix as much water as needed to blend the butter with the flour and add the dough with your fingers to form a round & # 8220make & # 8221 round. Wrap the dough in plastic wrap and let it sit in the fridge for 45 minutes (or in the freezer for 20 minutes).
  1. We take the dough out of the fridge, we put it on the work table on which we sprinkled the flour and we flatten it with the rolling pin. Sprinkle the flour and spread the dough in a rectangle three times the length and width. Lift the sides of the dough sheet and bend them towards the center until they meet in the center of the sheet. Press with your fingers to join them, then lift the sheet from the bottom up and cover the side edges that we joined by bending the sheet to the top end.
  1. Turn the sheet 90 degrees and stretch the sheet into a rectangle again, as we did the first time. Fold the sheet again in the same way, wrap it in food foil and put it in the fridge for half an hour. After 30 minutes, take the dough out of the fridge and repeat the folding 2-3 more times. Let the dough sit in the fridge for 30 minutes each time. The puff pastry can be stored for 2-3 days in the refrigerator or 6 months in the freezer.
  1. We wash the apples, peel them, scrape them and harden them together with the sugar and butter until all the liquid they leave decreases. Turn off the heat, add the cinnamon, rum essence and walnuts and mix to homogenize the composition.
  1. If we make the recipe for strudel with apples from frozen puff pastry, it is good that it is not completely thawed so that we can easily work with the dough sheet. Unwrap the dough sheet and, if necessary, spread it a little with the rolling pin. If we prepare the apple strudel recipe with homemade puff pastry, we spread the dough sheet about 0.5 cm thick and cut it into squares with a diameter of 10 cm.
  1. In each square of dough we put a spoonful of the apple composition and cover it by joining the two edges, and then we press them with our fingers to stick them together. With a sharp knife we ​​make a few notches on the surface of the strudel so that the steam can come out during baking and the strudel does not deform.

  1. We place the strudels in a large tray in which we put baking paper. Using a brush, grease them with beaten egg and a tablespoon of water.
  2. Bake the strudels in the preheated oven at 180 degrees for about 30 minutes, until golden brown.
  3. Remove the strudels from the oven, let them cool and then sprinkle with powdered sugar.

Once they have blended, add the rest of the ingredients. Pour the thick dough over the apples and level using a silicone spatula. Put the tray in the hot oven at 180 degrees Celsius for about 25 minutes or until it passes the toothpick test. You can serve the cake with sliced ​​apples with a little sugar, in which you added cinnamon.

Apple cake with cottage cheese

The list of ingredients is not long. So, you have no obstacle in preparing it as soon as possible, writes bzi.ro.

• 300 gr of cottage cheese
• about 120-140 gr of flour
• 1 sachet of baking powder
• 1-2 medium apples
• 3 eggs
• 4-5 tablespoons of sugar

We put it on the work table and knead it for a few minutes. We leave it aside and we will prepare the cream.

In a bowl put margarine or butter at room temperature and flour. Knead until well blended.

Then divide the cream into three.

On the work table we will spread the first dough, in a sheet, about 5 mm thick.

Over the dough sheet, we will spread the first part of the margarine cream with flour.

We start to wrap the dough, bringing the side from the wall to the middle of the sheet.

Then we will put half of the sheet at the edge.

Now, the left side, we will fold it up to half of the dough.

And we will put the right side over the left one.

Then put the dough on a plate, cover with cling film and refrigerate for 20 minutes. We will do this 3 times, only when we turn the second time, we will make the fold, the opposite of how we did the first time.

Homemade puff pastry apple strudel - a recipe loved by most housewives

INGREDIENT:
For sheets:
12 tablespoons oil
12 tablespoons mineral water
1 or
1/2 sachet of baking powder
1/2 teaspoon salt
flour content (approx. 500g)
For ciulama:
6 tablespoons oil
6 linguei faina
For the filling:
1 kg of apples
sugar to taste
1-2 teaspoons cinnamon

For starters we make ciulamaua. thanks to it, we can spread the strudel dough in extremely thin sheets.

In a kettle we put the flour and the oil, we mix them very well so that they do not remain lumpy, then we transfer them on the stove and let them simmer for a few minutes.

Set aside and let cool completely (should be used cold).

In a bowl put the egg, mineral water, oil, baking powder and salt, mix all the ingredients very well, then add the flour little by little, until you get a hard and non-sticky dough.

We spread the obtained dough with the help of a rolling pin, about the size of a finger, we help ourselves with a little flour, so that it doesn't stick. Spread the cooled ciulama on the entire surface of the dough, roll it lightly so that it does not flow, then wrap it in plastic wrap and refrigerate for 1 hour. After this time, take out the dough and divide it into 4 equal parts. We take each piece of dough and spread it with the rolling pin, we have to get a sheet so thin that the worktop can be seen, but be careful not to break it.

For the filling. we prepare it when the dough is in the fridge:

Peel the apples, then grate them with large mesh and boil them with the sugar and cinnamon until all the apple juice is reduced. Let cool, stirring occasionally.

Place the apple composition in 2 rows placed on the edges of the sheets on the left and right, then roll the edges in half until they join. We cut the rolled piece of dough of the desired size, I cut them about 10 cm each.

Place the pieces obtained in a tray with baking paper and put in the oven, over medium heat (180 degrees) for about 40 minutes or until nicely browned on top. When ready, dust the strudels with powdered sugar.
