Chanterelle Pizza Ingredients
- Pizza dough optional
- Chanterelles 250 grams
- Onion 1 piece
- Sour cream 18% 3/4 cup (approximately)
- Gorgonzola cheese 2 tablespoons
- Hard grated cheese
- Herbs (thyme, marjoram, oregano) to taste
- Black pepper to taste
- Allspice to taste
- Butter 2 tablespoons
- Salt to taste

Step 1: prepare the sauce.
Heat the sour cream in a saucepan, when it boils, season it with salt, pepper and herbs for flavor, add the crumbled gorgonzola cheese. Stir until the cheese melts, then remove the sauce from the heat. After adding gorgonzola, the sauce will become thicker.
You can use any other blue cheese, just remember that there should not be much cheese, because it has a bright taste that can overshadow everything else.
Step 2: fry the chanterelles.
Heat the butter and throw washed chanterelles into it. Fry two minutes, then add salt to taste, allspice and bay leaf (if you want). Put out more 3-4 minutesuntil partially evaporated liquid (drain the remaining). For too long chanterelles do not languish, because they still bake in pizza.
Step 3: form the pizza with the chanterelles.
Roll out the dough or knead it with your hands. Lubricate with sour cream sauce on top, sprinkle with hard grated cheese, then add onion sliced in half rings or feathers, and sprinkle fried chanterelles at the end. Sprinkle with aromatic herbs on top.
Step 4: bake pizza with chanterelles.
Preheat the oven as much as possible (I have 250 degrees) and send pizza to her 11-12 minutes. The filling and sauce should be browned properly.
