- Zucchini 1 kg
- Onion 5 (fresh, small)
- Parsley (chopped) 2 tbsp.
- Feta cheese 200 g
- Corn starch 4 tbsp
- 2 eggs
- Salt to taste
- Pepper to taste

Cooking:
Step 1: Three Zucchini

Grate zucchini with coarse holes. You only need to peel if your zucchini is overripe, with a thick skin and large seeds.

Transfer the zucchini pulp to a strainer and wring it out. If this is not done, the mixture will be very watery.
Step 2: mix the ingredients.

Mix the grated zucchini pulp with feta cheese, eggs, herbs and starch. Finely chop the onion and add it to the rest of the ingredients. Salt, pepper. Mix thoroughly to make the mixture homogeneous.

Put the mixture in the refrigerator on 30 minutes.
Step 3: fry the zucchini fritters.

Heat oil in a pan. Spread a mixture of fritters with a tablespoon.

Fry until golden brown on both sides.
After dipping fritters with a paper towel.
Step 4: serve zucchini with feta.

Zucchini fritters are served with natural Greek yogurt, but they go well with sour cream!
