We wash the lettuce and valerian very well in cold water so that no traces of sand remain. I usually wash them under running water, then let them sit in a bowl of cold water for 10-15 minutes. Let them dry, if you have a salad dryer it is perfect, if not in a strainer.

Place the salad and valerian in a larger bowl. Cut the pepper into the shape you want. Diced beets, diced eggs and diced tofu (replace tofu with your favorite cheese).

When everything is ready we make the dressing: I put all the ingredients in a jar with a lid. I put the lid on and stirred well until they were homogeneous.

Put the pepper and pieces of beetroot over the salad and pour half of the dressing. Stir a few times and then put quartered eggs and diced tofu.

Serve as such or as a salad next to a grill.

A balm for our health would be * the tonic 7 glasses *, so called from the elders, because they drink seven glasses. Mix the juices of: beets, carrots, black radish, garlic and red wine. 200 ml each ingredient, including wine. Drink a 40-50 ml every day, three times a day. The treatment is repeated at least 3 times a year. This cure is a body balm, because it helps immunity and keeps us healthy longer.

This set is a classic recipe, but good and tasty, used very often. We need: beets, an apple, a little ginger and two carrots.
Put all the ingredients in a blender until the contents are homogeneous.
If necessary, you can add a tablespoon of honey. It is a good nectar, full of vitamins and helps us especially in the cold season.

It is preferable for the juice to be consumed immediately. If you get a larger quantity, it is advisable to keep it in the refrigerator in closed bottles.

Wash the beets well, shape the back and tail and boil it in the shell in a pot with 1.5 l of cold salted water for 15 minutes.

After it has boiled, peel it and leave it to cool.

The chilled beets will be cut into small strips like noodles and put in a bowl deep.

We will grate the cleaned and washed horseradish on the small grater and then we will add it over the beetroot.

We will put the vinegar and sugar in the bowl containing the horseradish and the red beet, mixing until the two ingredients are well combined.

Nicoise Beet Salad

2. Put a large saucepan with boiling water over high heat. Add the remaining beets and cook for 12 minutes or until tender when pierced with a sharp knife. Drain and set aside to cool slightly.

3. Using gloves, carefully peel the skins from the beets and discard. Cut the large beets in half.

4. Meanwhile, to make the dressing, mix the oil, vinegar, mustard and capers in a small bowl. It is seasoned. Transfer the boiled beets to a bowl, along with the herbs and beans.

5. Add half of the sauce and mix. Put it aside. Put a saucepan of water over high heat. Add eggs and boil.

6. Drain and pass under a stream of cold water, then peel. Combine boiled beets with raw beets, tomatoes, salad, anchovies, and dressing in a serving bowl.

Otherwise it takes too long to make them and I don't think the little ones will have the patience to finish them, especially if you want to serve them for breakfast. I do so! Usually boil or bake in the oven 3-4 pieces of beets. Either I make a salad or a cream of beetroot and ginger soup, or I put them in some beetroot and pistachio muffins or in these pancakes.

Beets are also rich in fiber, antioxidants and are a good source of iron and folic acid. It is worth trying these fluffy, velvety, delicious and healthy pancakes, without artificial colors, just with beets.

Dyeing eggs with beets: a simple and natural method

Nowadays, we are so used to using chemicals for anything, that we almost forgot that in nature we find countless alternatives for many of the products on the market. For example, we can replace household cleaners with natural ones, we can make our own cosmetics from simple ingredients and, why not, even paint Easter eggs naturally, with the help of a common vegetable, which we find on any stall in the market.

Find out more about painting eggs with beets, a simple and healthy procedure to get the traditional Easter dish!

How to dye eggs naturally with onion and beet peels?

You can read the recipe written below or find below the video recipe, where you can see closely how I prepare this recipe.

We wash the eggs very well before, with a little dish detergent, we rinse them very well in water with vinegar, then with cold water. We need to degrease them well.

We put the leaves on both sides of the egg, we make a knot at the bottom of the tame, we put the egg inside, we put the leaves, we tighten well and we make a knot at the top as well.

We carefully place the leaves. (We use a new tights, which we wash very well before using.)

There are two methods: boil eggs with onion peels, or separately. I wrote more about Easter eggs here, including about traditions and what combinations we should use to get other colors.

Place the sliced onion and beetroot peels in a pot. Add eggs on top, then fill with cold water, so that the eggs are well covered.

Add 30 ml of vinegar. The vinegar will remove and refresh the color from the onion peels.

Add a teaspoon of salt. Bring everything to a boil and let it boil for 10 minutes, after the water boils.

We will take the eggs out of the pot and we will cut the tame, we will place them on a plate lined with absorbent paper.

Pour oil on a diskette, you can use cotton wool, napkins or a piece of cloth. Grease the eggs carefully on the entire surface.

That's all naturally painted eggs are ready. Some wonders came out! I recommend you to try this natural method of painting eggs.

Re: Beetroot salad with pomegranate and spinach

Ioana, can you please put a photo with the mint you use? I saw a pot of mint on the market today, but it was the one from which tea is made, with a long leaf and which is not lacy. Which one do you use?

Re: Beetroot salad with pomegranate and spinach

Thank you very much, Ioana. I thought you used this.
This mint is the one we use for lemonade and dishes. We find it in stores as an aromatic potted plant in the Netherlands. I bought it in other years, I couldn't keep it from year to year. The one in the square was like the one in grandma's garden. The plant is cheerful, invasive and unpretentious, but I have never seen this type of mint, my grandmother's mint, in food, but only in tea.

Re: Beetroot salad with pomegranate and spinach

Aura, some types of mint are more powerful, menthol feels stronger and seems to be inappropriate in salty foods. my grandmother's is dried for tea and I grind it and add it to Arabic food ([link])
