With simple ingredients and available to anyone, you will come up with an extraordinary cake, which you will fall in love with on the spot.
- Old 230 g
- Butter 120 g
- White flour 240 g
- Cocoa 50 g
- Baking powder 7 g
- Walnuts / almonds or mixture 150 g
- Apricot jam 100 g
- Milk 150 ml
- Eggs 2 pcs
- Raisins / cranberries 100 g
Step by step method
Put the sugar and eggs in a bowl and beat them with a food processor or a whisk until they froth and all the sugar dissolves.
Add in turn, half of the jam, butter at room temperature, raisins, half the amount of nuts and incorporate them.
Separately in another bowl sift the flour together with the cocoa and baking powder, mix them so that they are as homogenous as possible.
Add the cocoa flour and the ready-sifted baking powder over the oa composition and mix very well, so that it does not remain lumpy.
We pour the composition in a tray lined with baking paper and on top we put the other half of the jam, which we distribute as evenly as possible on the surface of the blackberry.
After we have distributed the jam over the blackberry, we add the rest of the nuts in the rain and put it in the oven for about 40 minutes at 180 degrees, or until it passes the toothpick test.
After removing it from the oven, let it cool and cut it into pieces according to your preferences. It can be served with an apricot, cherry or cherry coulis, but also with a chocolate sauce. I wish you good appetite and I invite you to test the recipe!
Vegan blackberry recipe with chocolate, nuts and orange tea
- Ingredients for the vegan blackberry recipe with chocolate, nuts and orange tea
230 grams of white wheat flour
100 grams of sugar
100 grams of ground walnuts
200 ml of hot water
an envelope of orange tea (I used from Just T)
50 ml of sunflower oil
100 grams of cherry jam
50 grams of dark chocolate with at least 55% cocoa
grated peel from an orange
1/2 teaspoon baking powder
1/2 teaspoon baking soda
a pinch of salt
a teaspoon of apple cider vinegar
50 grams of chocolate with 55% cocoa
a tablespoon of water
a tablespoon of coconut oil
coarsely chopped walnuts

- We turn on the oven setting the temperature to 180 degrees and we prepare a silicone tray, in a round guguluf shape. Usually the silicone trays are not greased with oil but this time I would recommend you to do it because it will clean better in the end. Grease the walls of the tray with a little oil and cover with about a teaspoon of cocoa, shaking off the excess.
- We prepare the tea as follows: we pour, in a cup, 200 ml of boiling water over a sachet of herbal tea with oranges (or other tea if you want). Let it infuse for three minutes, then take out the tea bag and set it aside and put the tea in a larger bowl.
- We break the chocolate into pieces and put it over the tea to melt. Do not stir for five minutes to allow it to melt evenly. Then mix and let it cool gradually, during which time we prepare the dough for the blackberry.
- Mix in a bowl, flour with baking powder, salt, baking soda, grated orange peel and walnuts.
- In another bowl put the tea with melted chocolate, add the oil, jam, sugar and mix well to blend.
- Gradually put the solid ones over the liquid ingredients and mix without insisting too much.
- Finally, add the teaspoon of vinegar, mix and pour the composition into a pre-prepared tray.
- Put the tray in the oven heated to 180 degrees for about 30 minutes, do the test with the toothpick and if it is clean we can take our cake out of the oven.
- We leave it to cool in the tray and when it is almost cold (so that we can get our hands on the tray) we can take it out and transfer it to a grill for complete cooling.
- Meanwhile, prepare the chocolate for garnish, as follows: melt the 50 grams on a steam bath together with a tablespoon of water, add the coconut oil. Homogenize and pour over vegan black with chocolate, taking care of a plate to collect the chocolate that will drain from its walls.
- Cut into slices and serve with a coffee, a cocoa milk or better an orange tea)
